Spontaneous get-togethers and spur of the moment plans are what summer is all about! Whether it’s a road trip to Lake Geneva (more on that coming soon!), having friends over for impromptu pool parties on the roof, or hosting friends at my place before we head to a music festival, this summer has been full of unexpected adventures and last-minute plans. Those moments are the best, aren’t they?
Remember Malibu’s #BecauseSummer campaign? I think it’s safe to say I’ve been trying to soak up every last second of summer as Labor Day nears closer and closer. While weekends tend to be crazy this time of year, I’m not letting a day or night go without a little bit of spontaneity! Since I’ve been rallying the troops on the reg and doing lots of hosting at my place, I’ve had to make sure my fridge and bar cart are stocked for when plans pop up on a moments notice.
One of my favorite cocktails to serve for easy entertaining is the Malibu Summer Cooler! It’s oh-so-simple to make, tastes like summer in a glass, and is hydrating at the same time. Win, win! Here’s the recipe for a single serving…
2 Parts Malibu Rum (or Malibu Pineapple!)
2 Parts Coconut Water
2 Dashes of Bitters
Combine all ingredients in a glass with ice. Stir and garnish with lime!
It’s so easy to make ahead of time in a big pitcher, too! A couple of weeks ago, a group of girlfriends and I decided to go see LaLa Land at Millennium Park last minute and I knew this would be the perfect cocktail to whip up to sip on a summer night. We still aren’t sure if cocktails are allowed in the park so travel coffee mugs, FTW. Our little secret, okay? 😉
